mdadm worked like a charm.
I'll get the source to make sure I have it handy.
Now I can just type
mdadm -A /dev/md0 /dev/hdc1 /dev/hdd1
and now I have my RAID 1 storage back after mounting it.
Now I need to figure out how to have it automounted when I boot.
