Hmmm, strange.
Never had an issue with the clock after having set the timezone correct.

Followed the same procedure and now my clock is one hour ahead.
Clock as always set to local time.
Looks like I am still in summertime.

I had the idea to copy the pdf-writer script from 5.X.9 to 5.X.10

Now printing to CUPS-PDF is working.

I must say, I have some 50 sfs files in /mnt/home.

Fortunately SFS load on the fly is handy as well, which is what I used finally.

I think you do need to do some reading on how puppy works to get the terminology correct.
