Where is the Menu code?

Where is the code/shellscripts/etc for the main Menus, that happen when you click Start or the desktop background?

(I hate to say it, but this kind of thing seems more "obvious" in Windows -- right clicking to get properties etc. Maybe just because I am more familiar with it. But Linux Internals are feelilng like a painful learning curve.)

But attention:
Manual entries get erazed by the next System-Update.
For personal entries, use this addon:

It stores your personal menue in a seperate file.
So after an update, you simply export again, and have your personal menue back in jwm and Desktops using jwmrc like fbpanel.

Here is a point to be made for something good and bad about Windows.

Good:
There is one way of setting it up beacause there is only one window/Desktop manger.

Bad:
There is only one Window/desktop manager.

This is to say that MUs response is correct if you are using JWM as your window manager but if you are using any of the other window managers each one would have it's own way of changing the menu (for now, That may change if XDG menus is included).
